Chicken and Veggie Frittata

Hello people, I am Ranita, a very lazy blogger. I am not a lazy gourmet though, and when I dished a particularly decadent brunch, I had myself thinking that this needs to be shared. So I asked my dear friend Amitabh, if I could publish in his blog, and he kindly obliged. So loading my system with caffeine to tide over the weariness of typing, I plunged:
My dish is called Chicken and veggie Frittata. Frittata is italian for open omellete. This dish is healthy, filling, easy to prepare and will earn you applauds gallore. Feel free to congratulate me.

Ingredients:
7 eggs, beaten
1 cup chopped cilantro
1 cup grated mozzarella cheese (You can substitute any variety you choose)
2 cups shredded rotisserie chicken (You can substitute boneless grilled chicken)
1 cup chopped baby spinach (Heart Healthy, people!)
1 medium sized potato, sliced circular, with the skin on.
Half cup thinly sliced red onion
1 cup boiled peas
2 teaspoon of garlic and green chilli paste (Or to your taste)
2 tablespoon of Olive Oil
Recipe:
Heat oil in a thick-bottomed pan, and add the potaoes, lining them to cook. To this, add the chopped onions, garlic-chilli paste, and the peas. Reduce the heat to a simmer, cover and cook, stirring only occassionally to prevent potatoes from breaking. To this, add the spinach, and finally add the shredded rotisserie chicken. Cover and cook.
To the beated eggs, add salt to taste, black pepper, chopped cilantro and grated cheese. Whisk thoroughly.
Add in the egg mixture to the cooked vegetables and let it set. Do not try and stir things up! Results won't be good.
Heat the oven to 250 degrees, and bake the frittata for 30 mins. Cooking times may vary a bit due to differences in ovens. Check if the egg's cooked through by inserting a knife. If it comes out clean, you are good to go.
Let the frittata rest for 5 mins, and slowly run your knife at the edges. You'll find the frittata easily coming off the pan. It will look like a giant pizza. In a plate, slice it into portions as you would do a pizza, and serve.

I have actually tried ur recipe few days back..ofcourse! with lot of variations in qty.. :)but overall, it was just amazing!! We loved it...
