Healthy Veggie Kababs

With so many of our close friends being vegetarian, we are often at our wits end to make something new and healthy. And our penchant to entertain friends makes it more challenging. During a recent lunch gathering, I was searching for recipes for making veg kababs. While they are in abundance, none was at the level of interesting and healthy!! Hence, devised a different and untried process and here it is.

Ingredients:

  • Chhana (Home made Paneer – the crushed, normal form) - from 1 lit of milk
  • Grated carrots - 2
  • Finely chopped beans - a bunch
  • Green peas - a cup
  • Finely sliced onions - 1 large size
  • Chopped Capsicum - 2
  • Fresh Coriander leaves - a bunch
  • Green chillies chopped - 2/3
  • Any other veggies you like to use!
  • 3 – 4 Slices of Bread
  • Salt to taste (preferably black)
  • Roasted Cumin powder - 1.5 tsp
  • Roasted Coriander powder - 1 tsp
  • Chat Masala (in place of the roasted cumin and coriander powder)
  • Amchur (Dry Mango Powder) - 1 tsp

Process:
The mix:

  • Take all the veggies in a large bowl alongwith the spices
  • Soak the bread slices in water, squeeze out the water and add to the mixing bowl
  • Mix everything into nice and consistent dough. You should be able to make nice balls without it sticking onto your hands. In case you find the dough watery, add a slice or two of bread depending on the consistency.
  • Once the dough is ready, make small one inch dia balls, flatten them and keep them aside

Cooking:

  • Take a grilling tray
  • Apply a little oil or butter on the surface
  • Place the flattened balls on the tray and brush the top surface with a dab of oil / butter
  • Run the grill on high temperature for about 6-7 minutes or till it is brown. Flip and grill again for about 5-6 minutes or till it is brown

Serve the Kebabs with sauce / dip / chutney and enjoy :)
