Sabudana Fusion

This morning while scourging the refrigerator for ingredients for a quick breakfast, found that we had little bit of soaked sabudana from the Shivratri. Luckily there was also chopped veggies kept for making breakfast.
D got the idea to make an experiment and used the veggies to make a sabudana khicdi a la poha and it turned out amazing.

Ingredients:
Soaked sabudana, chopped veggies- beans, carrots, capsicum, tomatoes and potatoes. Onion sliced.
For the spices : cumin and curry patta and green chillies
For garnish: lemon juice and  chopped coriander leaves.

Process:
Boil the potatoes, peel and cut it into small cubes and keep aside.
Chop all the vegetables and keep aside.
Heat oil in the pan and then add the cumin seeds followed by the chopped chillies and curry patta.
Add the carrrots and fry for about 3 - 4 mins and add the beans and sliced onion.
The veggies should be soft after about 5 mins of frying. Add the tomatoes and cubed potatoes and fry for about 3 to 4 mins. Add salt and a dash of sugar.
Add the soaked sabudana and mix well and allow it to cook for sometime, may be for 5 - 8 mins. Keep turning it intermittently.
Add lemon juice and chopped corriander, mix well and after about a minute, take out.
Serve and enjoy.

Optional: You can add fried peanuts as a garnish as well. Tastes good due to the crunchy feel. Some people coarsely pound the fried peanuts and add as a garnish.
